Fresh leaves in sandwiches, salads, sauces, other dishes, pesto
When & What to Harvest
Harvest leaves by trimming just above a node. Trim off the flowers to keep the plant producing new branches of leaves. Produces until weather cools in the fall.

6″-10″ apart; 1′-2′ tall; does best in clusters of 3 or more

Uses
Tea; Tinctures; Syrups: One of the best “adaptogen” herbs we can grow. Smells and tastes incredible with astringent, pungent, warm and sweet flavor and energetics. Helps calm and focus the mind and nerves.
When & What to Harvest
Harvest flowers and leaves by trimming just above a node. Keep harvesting throughout the season to keep the plant producing new branches. Produces until first frost. Hardier than Sweet Basil.

6″-10″ apart; 1′-2′ tall; does best in clusters of 3 or more

Dill
Uses
Culinary uses: leaves are used in many recipes (i.e. potato salad) and flowers and leaves are commonly used to flavor pickles. Medicinal uses: aromatic, sweet and warming for helping digestion and metabolism.
When & What to Harvest
Harvest leaves in early summer before flowering. Harvest flowers at full bloom or just before. Harvest seed heads when there are a few dry ones on the flower. Dry the flower head in a paper bag.

Uses
Use fresh leaves in salsa or other dishes. Seeds are aromatic and used in curry and many other dishes. Medicinally it can be used to improve digestion.
When & What to Harvest
Harvest leaves before the plant makes a flower. Harvest seeds once they have dried on the plant.

Cilantro will flower quickly when the weather is hot. Try planting in a shadier spot to prolong your leaf harvest.
